I am filled with excitement and anticipation as I prepare for my newest cookbook, The Cottagecore Baking Book, to arrive to book shops around the world this coming Wednesday, February 20th. This collection of 60 sweet and savory recipes was inspired by the Cottagecore aesthetic, but mostly it was inspired by my love of fantasy, nature, and whimsy. To make some delicious beer pretzel knots with a sprinkling of Everything Bagel Seasoning, you will need a few key ingredients:

  • Beer or Apple Cider. To give these pretzels an added depth of flavor, I added a light beer to the recipe. However, if you do not like to cook or bake with alcohol, you can simply swap out the beer for some apple cider.

  • Butter. For truly delicious flavor and soft texture, this recipe uses butter in the dough.

  • Baking Soda. Did you know that baking soda plays a crucial role in making pretzels? To create that delicious dark brown crust, you have to boil the unbaked pretzels in baking soda water before putting them into the oven!

  • Everything Bagel Seasoning. For some extra texture and flavor, I topped these pretzels with Everything Bagel Seasoning. This blend of poppy seeds, toasted black and white sesame seeds, dried onion and garlic flakes and sea salt is the perfect flavor booster. You can purchase this blend at the store or make your own!

how to make everything bagel beer pretzel knots:

Here are all of the steps you’ll need to know to make your own homemade Beer Pretzel Knots.

  • Make the Dough. First, you’ll have to make the pretzel dough. You can either make this with an electric mixer fitted with a paddle attachment or by hand. If you use a bread machine, you can mix the dough up to the first rise in your machine! This dough is fairly easy to bring together and is much like any other bread dough.

  • Shape the Pretzels. To shape the pretzels, you’ll first have to divide the dough into 12 equal sized pieces. Each piece is then rolled into a long rope, about 12-inches (30-cm) long. Then, the ropes are looped and tied into a loose knot, tucking the ends underneath to create a little braided bun shape.

  • Boil the Pretzels. After a quick rise, the pretzels are then boiled in a pot full of baking soda and water. This gives the pretzels their deep golden brown color while they bake! They are only boiled for about 1 minute.

  • Bake the Pretzels. Before baking the pretzels, sprinkle them generously with the Everything Bagel Seasoning. The everything bagel beer pretzels are baked for 10 to 15 minutes at 425° F (218° C).

recipe notes:

  • Make sure you don’t over-boil the pretzels. If you boil the pretzels in the baking soda water for too long, over 60 seconds, they can have a metallic after-taste, which no one wants! Make sure that you only boil each pretzel for around 30 to 60 seconds and then remove it from the water and boil the next batch.

  • Serve these with Honey Mustard Cheese Dip! You can find the recipe for the cheese dip in my new cookbook, The Cottagecore Baking Book.

Everything Bagel Beer Pretzel Knots

Ingredients

Pretzel Knots:
  • 1 cup (240 ml) warm water
  • ¾ cup (180 ml) light beer or apple cider, room temperature
  • ½ cup (100 g) granulated sugar
  • 2 tbsp (24 g) active dry yeast
  • 2 tsp (12 g) kosher salt
  • 1 tbsp (15 ml) melted salted butter
  • 5 cups (625 g) all-purpose flour
  • ½ cup (110 g) baking soda
  • ¼ cup (51 g) Everything Bagel seasoning

Instructions

To make the Pretzel Knots:
  1. To make the Everything Bagel Beer Pretzels, in the bowl of a standing electric mixer fitted with a dough hook, whisk together the water, beer, sugar, and yeast. Let the mixture stand for 8 to 10 minutes, until the yeast blooms, or has grown and becomes bubbly.
  2. Whisk in the salt and butter. Slowly begin to incorporate the flour, 1 cup (125 g) at a time, until the dough begins to form and pull away from the sides of the bowl. Knead the dough for 6 to 8 minutes, or until it no longer clings to the sides of the bowl and is smooth, soft, and elastic. Place the dough into a large, lightly-greased bowl and cover it with plastic wrap or a damp kitchen towel. Let the dough rise until doubled, about 1 hour.
  3. When the dough has doubled in size, gently deflate it with your hands. Transfer the dough to the countertop and divide it into 12 equal-sized pieces. Roll the pieces into 12-inch (30-cm) ropes. Loop the ropes into a single knot, tucking the ends underneath the knot and pinching them closed.
  4. Line two baking sheets with parchment paper. Place the final shaped pretzels onto the baking sheets and cover them with plastic wrap or a damp kitchen towel. Let the pretzels rise until nearly doubled, 40 to 45 minutes.
  5. Meanwhile, preheat the oven to 425°F (218°C). In a large pot, bring about 2 quarts (2 L) of water to a boil and stir in the baking soda until it is fully dissolved, about 2 minutes. Put two to three of the puffed pretzels into the boiling water, risen side down. Boil the pretzels for 1 minute and no longer. There is no need to flip the pretzels.
  6. Remove the pretzels from the boiling water with a slotted spoon and transfer them back to the baking sheet, risen side facing up. Sprinkle the tops with the Everything Bagel seasoning. Let the water come back up a boil and repeat with the remaining pretzels and seasoning.
  7. Once all of the pretzels have been boiled, bake them for 10 to 15 minutes in the preheated oven, or until they are a deep golden brown.
  8. To store the pretzels, keep them at room temperature wrapped in plastic or foil for about 1 week.
