The Easiest Blueberry Cobbler
I'd never made a cobbler before, and hadn't really eaten one either. After we went blueberry picking last week, it seemed unquestionable that I should definitely try out baking a blueberry cobbler. Right?! It turned out so freaking delicious. Enough so that my dad told me I needed to stop baking/cooking because he was getting too fat. This was eating melty, gooey, blueberry goodness.
- 1 cup flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 - 2/3 cup milk
- 1/2 cup butter
- 3 cups blueberries
- 1 tbsp lemon juice
- Preheat oven to 350. Melt the butter in the oven your baking dish (8 x 11).
- Mix the flour, sugar, salt, and baking powder. Add the milk gradually until a smooth batter forms. Spoon the batter into the baking dish on top of the now melted butter until it is covered in batter.
- In a bowl, sprinkle the lemon juice over the blueberries and mix gently so as not to squish the berries. Top the batter with the blueberries.
- Bake for 35-45 minutes or until the cobbler has turned light brown across the entire dish and is bubbling. Serve warm with a scoop of vanilla ice cream.
